La Petite Maison's Bikini – How to Make It

We present a simplified take on a drink featured on the seasonal drinks list. It's a large-volume pre-mixed which is bursting with essence of a holiday season, rendering it excellent for your festive gathering. Reserve the remaining cordial to use in breakfast cocktails, puddings, or to make additional servings of the drink.

Bikini

Serves 10 guests

For the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (makes 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

Making the Syrup: Combine the listed components inside a pot, bring to a light boil, agitating until the sugar dissolves. Then, turn off the heat allowing it to cool completely. Transfer into an sterilised bottle, seal and refrigerate it chilled, it can be stored for about four weeks.

To make Cocktail Base: Pour the specified spirits and syrup into one big jug, let it rest for an hour, then strain best through cheesecloth, to ensure it's perfectly clear.

For serving: Measure 85ml of your cocktail base to a stirring glass containing ice, and agitate carefully for a minute until cold. Pour to a cold coupe glass or similar, decorate with the cranberries and complete it using a light spray with the mandarin essence above the glass.
